White Wines
Fruity and Balanced
White wines in the visual phase have a pale yellow color, which can show greenish or amber hues. In the olfactory phase, they are frankly fruity with clean and fresh primary aromas. In the gustatory phase, they are persistent, smooth, slightly acidic, with a harmonious and fruity aftertaste. There is a balance between their alcohol content, acidity, and, if present, residual sugars.
Semi-aged Wine

In the visual phase, the color is cherry red, clean, bright, and with good depth, with cardinal glints. There is a predominance of red and purple hues. In the olfactory phase, they exhibit clean aromas of medium intensity with notes of ripe red fruit. Barrel-aged wines present toasted notes and vanilla, with hints of pepper and cocoa. In the gustatory phase, they are powerful on the palate, clean and silky, with medium intensity and tannicity.

Minimum 6 months in barrel
Crianza wines have colors ranging from ruby red to cherry red, with hints of tile and purple. They are clean, bright, and have a medium depth. On the nose, they present a clean and intense aroma, where subtle notes of red fruit are initially perceived, along with medium to high intensity vanilla and toasted notes. Grape Varieties
The most widespread varieties are Bobal, Cencibel, Merlot, and Syrah
The predominant and historical grape is Bobal, which was gradually joined by the ubiquitous Cencibel and, more recently, the flavorful Merlot and the playful yet serious Syrah, which has found an ideal vegetative environment in this area.
The grape varieties included in the denomination for red wines are Cencibel or Tempranillo, Cabernet Sauvignon, Merlot, Syrah, Bobal, Petit Verdot, and Cabernet Franc. For white varieties, they include Moscatel de Grano Menudo, Pardilla, and Sauvignon Blanc.
Fifty percent of the vineyards are between 35 and 40 years old, ensuring a good balance between production and grape quality.
